Abstract

The effects 0 f gamma-irradiation 0 n chemical composition 0 f some different
crop seeds, fungal infection a nd aflatoxin 81 production by Aspergillus flavus were
investigated. Asp < /em>ergillus flavus infected seeds behaved differently according to their
principal constituents. Aspergillus flavus caused an increase in protein and a
decrease in lipids and carbohydrate contents of wheat, soyabean and fababean
seeds. Growth of Aspergillus flavus and production of aflatoxin 81 was inhibited at a
dose level of 5 kGy.
Aspergillus flavus utilized carbohydrates of the seeds for its growth and
aflatoxin production. Crops were arranged, in a descending order according to
aflatoxin produced in seeds as, wheat > soyabean > fababean. There were no
changes in chemical constituents of irradiated seeds, such as protein, lipids, and
carbohydrates.
